Pour enough oil into a baking pan to cover the bottom. Place in a 375 degree F oven to heat the oil. Grate vegetables into a large bowl. In a separate bowl, combine eggs, salt and pepper. Add eggs to grated vegetables and mix well with a fork. Remove the pan from the oven and pour in the vegetable mixture.

Bake at 375 degrees F for about 1 hour, or until the top is lightly browned and the kugel is firm.
