Yield: 4 servings

Preheat oven to 350 degrees F.

Grease a 1-qt casserole.

Break up matzo and soak in 1 cup warm water til soft. Squeeze out water. Heat oil and margarine in medium skillet over medium- high heat. Saute onion and celery til soft, add matzos and cook 5 minutes longer. Add beaten eggs, salt, and pepper.

Turn into the casserole and bake, covered for 30 minutes. Uncover, INCREASE oven temperature to 400 degrees F, and bake, until top is brown.
