Yield: 6 to 10 servings
1. Preheat the oven to 350 degrees F. Lightly grease a shallow 2-quart baking dish or large pie plate.
2. Beat together the eggs and milk. Add the cottage cheese, salt, honey, and cinnamon.
3. Place half the matzo pieces in the baking dish. Pour half the cheese-egg mixture on top. Sprinkle with the almonds. Cover with the remaining matzo pieces and the rest of the cheese-egg mixture. Bake for about 40 minutes, or until the top is brown and slightly crunchy.
Think of this as a blintz loaf for Passover. It is good as part of a dairy supper or as a light meal on its own.
