Yield: 9 servings

Preheat oven to 375 degrees F. Soak matzo in water. Drain, press out water, being careful not to break boards of matzo. Generously grease a 9 x 9- inch pan. Place 1 board on bottom; spread with 1/3 of the cheese. Repeat last step, endiing with 4th matzo. Beat eggs slightly and add milk, lemon juice and rind, sugar and salt. Pour over top. Bake for 1 hour.

NOTE: May be served hot or cold, as a dessert or part of a dairy meal (like a noodle and cheese kugel.)
